Soupe A la Tomate

Ingredients:
1 tbsp of butter
1 small onion
1 pound of fresh tomatoes
2 tbsp flour
1 liter of water
salt, pepper
basil leaves
thyme
1 tbsp of brown sugar

Equipment:
1 blender or electric mixer

In a large pan, melt the butter and add the onions diced. Wash the tomatoes and cut them into small pieces. Add the tomatoes into the pan and stir for 30 seconds. Add the flour and stir for another 30 seconds. Add the water slowly while continuing to stir.

Add the salt, pepper, basil leaves, thyme and brown sugar. Let it cook slowly over low heat for about 50 minutes while stirring every few minutes. Then it pour into the blender and liquify the soup for just a few seconds. Now it is ready to serve. As is customary with French meals, this is served as a seperate dish. It could be the first course of a meal..

A meat dish and salad would complement this quite nicely.
